    坚持低脂——芒椰Ricotta芝士冻饼

         继上周偶尔在麦德龙发现茅屋芝士后,这几天又意外发现了Ricotta Cheese的身影,开心得差点在冰柜前眩晕过去。旁边的LG一脸的不解,是啊,一盒芝士值得这样大呼小叫的吗?呵呵,那是因为我爱极了Ricotta的清新味道。
     
         两年前在HK曾经邂逅过它,还记得那一次做的芝士冻饼连极少吃甜食的妈妈都直呼好吃。但是Ricotta实在是太可遇不可求了,之后好几次去HK都和它失之交臂。这次偶尔得之,怎能让我不激动呢?
     
         Ricotta是意大利芝士,虽然它没有Mascarpone那么出名,但是味道却一样出彩。严格意义上来说,Ricotta是芝士副产品,为凝乳分离后排出的乳清制品,口味清淡细致、湿润,属低脂且含丰富维他命的芝士。除了用来做冷菜,Ricotta也适合做蛋糕。由于它的保质期相当短,适合即买即用哦。

          一盒250G装的Ricotta,被我分开两份使用,做了两个不同口味的芝士冻饼。可可,你订的芒果慕斯也是用它做的哦,可惜时间关系没来得及拍照。还好今天是周末,JOJO订的蛋糕可以来一个身份照啦:)
     
          由于没有任何的限制(JOJO给了相当的自由给我),我用芒果和椰奶这对最佳组合作为蛋糕的主题,配合Ricotta的清新口感,希望JOJO会喜欢。
     
    成分:
    Ricotta cheese 125G  细砂糖50G  椰奶150G  淡奶油75G  鱼胶粉10G+水30ml
     
    做法:
    1,ricotta cheese用手动打蛋器搅散,加入砂糖打滑
    2,依次加入椰奶和隔水座溶的鱼胶溶液
    3,拌入打发至6-7成的淡奶油
    4,准备好两片杏仁海绵蛋糕,其中一片铺底,倒入一半慕斯糊
    5,准备多多的芒果粒,满满铺在中层,再放上另一片杏仁海绵蛋糕及余下的慕斯糊
    6,冷藏凝固后脱模装饰
